Carving out some fun…

Last week to get ready for Halloween we carved our first pumpkin together. I wasn’t sure how Payton would like digging in and cleaning it out but she was a rock star!  This was one of my favorite activities to do with my pre-k students and after we were done we roasted the seeds. So when Payton and I got done cleaning the huge pumpkin we cleaned the seeds of and let them dry over night.
Later in the day we carved the face of our jack o lantern. I asked Payton what shapes we should make for the eyes – Triangles she said. Then I asked what shape the nose should be a circle, square or triangle – another triangle it was and finally I asked what kind of mouth we should make a scary one – nope a triangle one.

That night we roasted the first half of our pumpkin seeds. We tossed them with a little olive oil and some cinnamon sugar mixture and baked at 300 for about 20 minutes. Then next day we baked the rest with just a little sea salt. Both are so yummy and a great healthy little snack you can take with you. You can also roast them with other spices depending on what type of flavor you want. You could make them spicy or sweet what ever you like.
